Our Story

Three generations, one method.

Shalom Harvest began on a small stretch of cane fields, where sugar was never meant to be white. It was meant to be honest — boiled in open pans, stirred by hand, and packed while the warmth was still in it.

We still make it that way. Every batch of Nattu Sakkarai comes from farmers we know by name, processed within hours of harvest so nothing is lost to time or transport.

The Process

From cane to crystal, in four honest steps.

No chemical clarifiers, no refining agents — just heat, time, and hands.

Harvest

Cane is cut at peak sweetness, early morning, moved to the mill within the hour.

Press & Boil

Fresh juice is pressed and slow-boiled in open pans — no chemical clarifiers, ever.

Crystallize

As it cools, the syrup is worked by hand into the loose granular texture Nattu Sakkarai is known for.

Pack

Sealed the same day, straight from pan to pack — no long storage, no staleness.
